  • 9 oz package cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh basil, chopped
Dressing Ingredients
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste

Method
 

Cooking the Tortellini
  1. Bring a pot of salted water to a rolling boil, then add the cheese tortellini and cook according to package instructions (typically 3-5 minutes). Drain and rinse under cold water to cool.
Making the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper.
Combining Ingredients
  1. In a large bowl, combine the cooled tortellini with tomatoes, cucumber, red onion, olives, feta, and basil.
Mixing and Serving
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately, or chill for 30 minutes to allow flavors to meld.

Notes

For best results, cook tortellini al dente. Experiment with the dressing by adding red pepper flakes or swapping Dijon for honey for a sweeter flavor. Consider adding spinach or arugula for extra nutrition. Leftover tortellini makes a great snack when tossed with olive oil and herbs.
