  • 8 slices thick slices of brioche or challah bread
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon sugar
  • Butter for frying Generous pat
  • Powdered sugar for dusting
  • Whipped cream For serving

Method
 

Make the Cheesecake Filling
  1. In a small bowl, combine the cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract. Blend until smooth and creamy, then fold in the diced strawberries. Set aside.
Prepare the French Toast Batter
  1. In a shallow bowl, whisk together the eggs, whole milk, 1 teaspoon of vanilla extract, ground cinnamon, and sugar until well combined and frothy.
Assemble the Stuffed French Toast
  1. Spread a generous portion of the cheesecake filling on one slice of bread. Top with another slice and press down gently to seal. Repeat with remaining slices.
Cook the French Toast
  1. Heat butter in a skillet over medium heat. Dip each stuffed sandwich into the egg mixture, coating both sides. Cook for 3-4 minutes on each side until golden brown.
