Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
Wet Ingredients
  • 0.5 cup Unsalted butter Softened
  • 2 large Eggs
  • 1 cup Milk
  • 1 teaspoon Vanilla essence
Filling
  • 2 cups Mixed fresh berries (strawberries, blueberries, and raspberries) Washed and dried

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare your baking environment.
  2. Grease a 9-inch round cake pan with butter and dust with flour.
  3. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  4. In another bowl, beat the butter until creamy, then add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry mixture to the butter and egg mixture, alternating with milk, mixing until just combined.
  6. Gently fold in the berries.
  7. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 25-30 minutes. Check for doneness with a toothpick.
  2. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serving
  1. Serve the cake dusted with powdered sugar or with whipped cream or vanilla ice cream.

Notes

For added flavor, you can mix in lemon or orange zest. Use yogurt or applesauce for a healthier version. Frozen berries can be used if thawed and drained properly.
