Ingredients

  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.25 cups 1/4 cup granulated sugar
  • 0.33 cups 1/3 cup unsalted butter, melted
Cheesecake filling ingredients
  • 16 oz 2 (8 oz) packages cream cheese, softened
  • 0.5 cups 1/2 cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 cups 1 cup whipped cream
Fruit topping ingredients
  • 2 cups 2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • 0.25 cups 1/4 cup granulated sugar (for topping)
  • 1 tablespoon 1 tablespoon cornstarch
  • 0.25 cups 1/4 cup water

Method
 

Preparation
  1. In a medium bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined.
  2. Press this crumb mixture firmly into the bottom of a 9-inch springform pan to create a solid base.
Make the cheesecake filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually add in the powdered sugar and vanilla extract, mixing until everything is beautifully combined.
  3. Gently fold in the whipped cream to achieve a light and fluffy consistency.
Assembly
  1. Spread the cheesecake filling evenly over the prepared graham cracker crust.
Prepare the fruit topping
  1. In a saucepan over medium heat, combine the mixed berries, granulated sugar, cornstarch, and water.
  2. Cook until the mixture thickens and the berries soften, about 5-7 minutes.
  3. Allow the mixture to cool slightly before using it.
Top and Chill
  1. Once the fruit mixture has cooled, spoon it generously over the cheesecake filling.
  2. Place the cheesecake in the refrigerator for at least 4 hours to set.
Garnish and Serve
  1. Garnish the cheesecake with additional fresh berries just before serving.

Notes

Consider using a mix of different berry types for richer flavor. Add a splash of lemon juice to the whipped cream for extra zest. Sprinkle chopped nuts or coconut on top for added texture.
