  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds Feel free to substitute with vegetarian sausage if desired.
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter Can be substituted with olive oil for a dairy-free option.
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce Alternatively, use tamari for gluten-free.
  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, finely minced For garnish.

Method
 

Preparation
  1. Preheat your oven to 400 degrees F.
  2. Line a sheet pan with parchment paper or coat it with nonstick spray.
  3. Spread the sliced sausage, diced sweet potatoes, and broccoli evenly across the sheet pan.
  4. In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  5. Stir in honey, soy sauce, apple cider vinegar, salt, and black pepper. Let this mixture simmer for 2-3 minutes until slightly thickened.
  6. Pour the glaze over the sausage, sweet potatoes, and broccoli, tossing to coat.
Cooking
  1. Roast in the oven for 25-30 minutes, stirring halfway through.
  2. Once done, garnish with parsley and serve.

Notes

For heat, consider adding red pepper flakes. Can be prepped ahead and stored in the refrigerator before roasting.
