Method
 

Preparation
  1. Preheat your oven’s broiler.
  2. Using kitchen scissors, carefully cut the top shell of the lobster tails lengthwise, and pull the meat upward.
  3. In a bowl, combine melted butter, minced garlic, smoked paprika, lemon juice, salt, and pepper. Mix until cohesive.
  4. Brush the mixture generously over the exposed lobster meat.
Cooking
  1. Place the lobster tails on a baking sheet and broil for about 8 to 10 minutes, or until the meat is opaque and lightly browned.
  2. In a saucepan, melt 1 tablespoon of butter over medium heat. Stir in the flour to create a roux, cooking for 1 minute.
  3. Gradually whisk in the heavy cream, stirring continuously until the sauce thickens, about 3 to 4 minutes.
  4. Stir in the Parmesan cheese, extra minced garlic, and seasoning until the sauce is smooth.
  5. Spoon the rich cream sauce over the broiled lobster tails and garnish with parsley.

Notes

For enhanced garlic flavor, roast the garlic cloves before adding them to the sauce. Save lobster shells to make broth for future recipes. For lighter dish, substitute half of the heavy cream with broth.
