Preparation
- Preheat your oven to 400°F (200°C).
- Pat the turkey fillets dry with a paper towel. Season both sides generously with salt and freshly ground black pepper.
- In a shallow bowl, stir together fresh breadcrumbs, grated Parmesan cheese, chopped parsley, dried thyme, and grated lemon zest. Add 2 tablespoons of olive oil and mix until moistened.
- Dip each turkey fillet into the beaten egg, then coat it thoroughly in the breadcrumb mixture, pressing gently to adhere.
Cooking
- Heat 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat. Cook the breaded turkey fillets for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 10-12 minutes until the internal temperature reaches 165°F (74°C).
Making the Sauce
- For the cranberry sauce, combine cranberries, granulated sugar, orange juice, grated orange zest, and a pinch of cinnamon in a small saucepan. Bring to a boil and simmer for 8-10 minutes until the cranberries burst and the sauce thickens.
Serving
- Plate the turkey fillets and top with cranberry sauce. Let rest for a few minutes before serving.
Notes
To enhance flavor, consider adding a sprinkle of smoked paprika or garlic powder to the breadcrumb mixture. Store-bought cranberry sauce is an alternative if short on time.
