Preparation
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, chopped onion, garlic powder, salt, and black pepper. Mix until just combined.
- Scoop portions of the mixture and roll them into 1 to 1.5-inch meatballs. Place the meatballs carefully in the crockpot.
- In a separate bowl, mix the beef broth and French onion soup mix until well blended. Pour this mixture over the meatballs in the crockpot.
Cooking
- Cover the crockpot with its lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Once cooked, sprinkle shredded mozzarella cheese over the top of the meatballs and cover for another 15 minutes to let the cheese melt.
Serving
- Serve the meatballs hot over rice or pasta, enjoying the flavorful broth.
Notes
For added flavor, consider Worcestershire sauce or mustard in the meat mix. Sautéing the onions beforehand brings out their sweetness. Crushed red pepper flakes can add spice. Make meatballs a day in advance for better flavor.
