Preparation
- Preheat your oven to 350°F (175°C) and grease two round cake pans to prevent sticking.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, sugar, and salt until thoroughly combined.
- In another bowl, beat together the eggs, buttermilk, melted butter, vanilla extract, and peppermint extract until smooth and well-blended.
- Gradually combine the wet mixture into the dry ingredients, stirring gently to avoid overmixing.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in their pans for about ten minutes before transferring them to cooling racks to cool completely.
Frosting
- To prepare the frosting, beat together the cream cheese, powdered sugar, and heavy cream until light and fluffy.
- Once the cakes are fully cooled, spread a generous layer of frosting between the two layers and on top.
Notes
For best results, ensure all ingredients are at room temperature before mixing. Consider adding crushed peppermint candies as a garnish for an extra festive touch.
