Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two round cake pans to prevent sticking.

  3. In another bowl, beat together the eggs, buttermilk, melted butter, vanilla extract, and peppermint extract until smooth and well-blended.
  4. Gradually combine the wet mixture into the dry ingredients, stirring gently to avoid overmixing.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in their pans for about ten minutes before transferring them to cooling racks to cool completely.
Frosting
  1. To prepare the frosting, beat together the cream cheese, powdered sugar, and heavy cream until light and fluffy.
  2. Once the cakes are fully cooled, spread a generous layer of frosting between the two layers and on top.
